Here’s what Filbert’s bakery saying about this lovely bread:

“It has grains that have been malted (wheat, rye and barley) and we use some stoneground wholewheat flour to give it a beautiful deep brown colour and nutty flavour. A shorter fermentation time than the majority of our breads makes for a lighter texture but we add a good dollop of our sourdough starter to the mix to for all the good things it does for taste and keeping qualities. Certain customers have never had any other bread to this day. 4 hour fermentation.”
