This is our own twist on the Italian classic. Our butchers select the perfect pork loin; cut long with the belly left on from our local Gloucester Old Spot Pork. Using only the freshest ingredients we marinate the pork in parsley, rosemary, thyme, fennel seeds & garlic. We then drizzle with freshly squeezed lemon juice and season with a sprinkling of salt & pepper before it is rolled up and tied ready for roasting.
