“Sourdough cultures are unique to their bakeries and in our opinion display quite some ‘personality’ but the bread that is baked keeps to a general principal of a vary-holed bread, toothsome with a bit of a tang (like yoghurt). Ours started very simply several years ago, with some flour, some water and the very special powers of fermentation. The fermentation is what gives this type of bread its particularly chewy texture, vibrant taste and high nutritional value and is the one of the oldest methods of making grains both edible and transportable. Our house sourdough is relatively light in colour and sourness and much beloved (even when it misbehaves).”
