You can roast it whole for a simple, quick and delicious roast dinner or use to make that statement beef wellington. The richness and tenderness of this cut comes from the minimum 28 days that it is dry aged. Alternatively, you can portion it into fillet steaks, for the ultimate Steak Dinner.
